Yummy--Green Chili Stew!!

I made Green Chili Stew (Witches Brew) for all the Witches.... They wanted my spell/potion book....Problem is..... well, I'm not good with spells/potions, I kinda of throw stuff in until it looks right.So here's my best explanation of how to make Green Chili Stew/Witches Brew:

Put about two cups of flour into a bowl (that has a tight fighting lid), add salt, pepper, and garlic salt. Add stew meat cut into bite pieces or round steak cut into bite size pieces put the lid in and shake it up.

Pour some oil into a frying pan and heat it up (I like to put about 1/2" of oil in to really coat a crunchy edge onto the meat and get a thicker stew) and brown (when I say brown, I mean really brown it, cook it for awhile, if you do this part long enough your meat will be TENDER, that's really important in my opinion to making a good stew).

Put some water into a big pot and start heating on the stove. Pour the entire browning pan into the water.

Add peeled and diced potatoes (I cut the potatoes into bite size portions)Add carrots (I cut baby carrots into fourths)Add green chili (I am from New Mexico and the only way to REALLY eat green chili is to buy it in a burlap bag and have it roasted over an open flame and then freeze it in ziplock bags and use it all year, if you MUST, you can buy it frozen in a tub at Albertsons, but it isn't the same the closest thing is the Autumn Roast in the frozen tub but it is hard to find. If you are really hard pressed you can use the green chili from the can, but really, it's not at all the same!)Add more garlic salt (I love garlic salt)

I can't really tell you how much meat/water/potatoes/carrots/green chili. I just add it until it looks chunky enough for my taste, I like to put a dipper in and pull out chunks of everything, it looks pretty to me and I see all the colors and all of the ingredients--lots of ingredients to eat, not just brothy....LOL!! See what I mean about NOT doing recipes, I make people crazy, but that's the way I cook, you gotta come over and measure it all if you want specifics!!

Boil until the carrots and potatoes are soft.Pour into bowls, cover with shredded cheese, and add a dollop of sour cream on top!!YUMMY!!
